Hi!
I have built two Cubo 15 Extended and I already own two RCF LF15X401 and two Eminence Kappa 15LFA drivers.
Which of these works better in this enclosure?
Or would you recommend using a different 15″ driver?

The Kappa 15LF (600 W) is a good (low) budget driver, the LF15X401 (1500 W) is a good medium-high budget driver. Both will work but the 1500 W driver will put higher demands on the build quality and building material used for the Cubo 15 Extended. If that's all good, I'd go for the RCF because (with a 1500 W+ amplifier) it's on a complete other level than the Kappa 15LF..

I'm looking at building a Cubo 15 and considering the PRV Audio 15SW2000-4 as a budget 4 ohm driver. My original pick, the Kappa Pro-15LFC which was remarked on favorably by Cubo before, is discontinued.
Specs from PRV's website: Fs 46.8Hz, Qts 0.44, Vas 84.4L, Xmax 12.5mm, 4Ω.
That puts Qts×Vas at ~37, which looks like Extra Extended territory to me, but the Fs is noticeably higher than the Kappa Pro-15LFC's. Would this driver work well in Cubo 15, and if so, Extended or Extra Extended? Also, with Fs at the upper range for the Cubo, would it struggle to actually get down to 40hz?
Since this is a battery operated system (bicycle) I want to use a 4 ohm driver so I can use off the shelf car audio amps effectively, but there just aren't many to choose from.

Not sure what you mean by the detailed plan (it's been a while) but I think a YT-video of an actual build is going to explain heaps more. Like this Russian build of a Cubo 18, apart from a few different dimensions, it's exactly how to build a Cubo 15 step-by-step:
